It is summer – and I have been missing the Swedish summer food.
Therefor I decided to make a light dinner, inspired of typical Swedish food ; Baked potato with Tuna Topping.
Ingredients
- baked potato
- red onion
- hard-cooked egg
- 1 can baby clams in olive oil
- 2 cans tuna in water
- 3/4 cup sour cream
- 2 tbs mayonnaise
- 1 tsp dill
- 1 tsp chili powder
- salt and pepper
Combine the tuna with sour cream and mayonnaise, dill, chili powder and salt + pepper. Stir well, and add more herbs and seasoning if you want and need it.
Serve the tuna topping with baked potato, hard-cooked egg and diced red onion. Top the potato with baby clams.
On the side, you can also serve home made garlic bread with a simple salad of cucumber and tomatoes – with sprinkles of Balsamic vinegar on top.
