I made a very simple lunch/supper dish for today.
Since I had not planned any special menu for today, I took whatever I could find – so we ended up having some delicious tomato sauce with black chickpeas and salami, served with spaghetti.

Ingredients
- 1 3/4 cup diced tomatoes
- 1/2 red onion
- 2/3 cup finely sliced salami
- 1 cup black chickpeas
- 1 garlic clove
- 1 Poblano hot pepper
- 1 tbs balsamic vinegar
- 1 tsp sugar
- 1 tsp Italian seasoning
- salt and pepper
Toss diced onion in a hot pan with some olive oil, and add shredded Poblano hot pepper, chickpeas, finely sliced salami and shredded garlic. Cook them in the pan for some minutes, and add then the diced tomatoes with balsamic vinegar, sugar and Italian seasoning. Let them all simmer for about 10-15 minutes.
Add some salt and pepper.
Serve with cooked pasta, and Parmesan cheese.
