I love potato casseroles! But what is even more delicious, is root vegetable casserole.
I made this dish last night – and it turned out to be really tasty… Definitely on of my favorite potato dishes.

Ingredients
- 4 big potatoes
- 3 carrot
- 1 rutabaga
- 3/4 cup half & half
- 1 cup shredded cheese
- 2 garlic cloves
- 1 tsp oregano
- 1 tsp Greek seasoning (with salt)
- salt and pepper
Dice potatoes, carrots and the rutabaga into small cubes, and boil in salted water for about 15 minuter.
Mix the cooked root vegetables with minced garlic, oregano, Creek seasoning, some salt and pepper and half of the shredded cheese. Transfer the mixture to a casserole dish. Pour half & half over the dish, and finish with the rest of the shredded cheese.
Bake in oven, about 350 degrees – 30 minutes.
